I think jump attacks do more poise damage than r2s , seen somewhere that a jump attack is about double damage. Dual wield jump attacks do much more poise damage than two handed jump attacks. Dual wielding is typically for those that exclusively roll. L2 ashes only utilizes your primary (RH) weapon. Don't know about the no skill question. Twin blsdes are much better 2-handed than dual weilded. Two twinblades is a meme, unless you really prefer that moveset.
